BBQ recipes are a great way to enjoy the summer and get a break from cooking. Here are some of the most delicious recipes.

  1. An easy yet delicious way to get your Bangers & Mash fix, this 10-minute recipe will have you mashing potatoes, sautéing onions and frying sausages in no time at all.

    Ingredients:

    • 3 Pork Sausage
    • 3 Peeled Potatoes, Chopped
    • 1 Red Onion, Sliced
    • 3 Garlic Cloves
    • 1 Bunch of Chives, Chopped
    • 2. Rosemary Sprigs
    • 1 Teaspoon Sugar
    • 4 Tablespoons of Beef Stock (or other stock)
    • Olive Oil
    • Butter
    • 2 Teaspoons of Worcestershire Sauce
    • 3 Tablespoons of Balsamic Vinegar
    • 1 Tablespoon Grain Mustard
    • Smoked Salt 


    Cooking Instuctions:


    Preheat oven to 160 Degrees Celsius/325 Fahrenheit. Bring pot to a boil with enough water to cover potatoes.


     Add potatoes to pot once boiling and cook.


    Heat pan to medium-high heat and cover pan with olive oil and add sausage. Take a cocktail stick and poke casing so it doesn't burst. Smash garlic and add to pan. Then add rosemary sprigs. Brown the sausages in pan then add 4 knobs of butter to pan. Once butter is melted, baste sausages. Add one more knob of butter and add to oven to cook.


    Take another pan and turn to medium-high heat and add olive oil to cover pan. Once warm, add onions. Once onions have cooked for about a minute, add sugar then season with salt. Then add 4 knobs of butter. After butter melts and add balsamic (4 tablespoons or enough to cover onions) as well as worcestershire. Reduce mixture. Once reduced add stock and bring to a boil and reduce mixture.


    Once the potatoes are cooked, drain them and then add them to pot over medium heat then mash. Taking the potatoes on and off the heat as you do. Once nicely mashed add a glug (2 tablespoons) of olive oil to the mixture and mix in. Then lower the heat and add smoked salt, mustard and chives. Mix thoroughly and plate.


    As the onion mixture is reduced, add one knob of butter and melt and mix. Place sausages on top of potatoes and add onion mixture 


  2. BBQ sauce

    Ingredients:

    • 300g (10 1/2oz) tomato ketchup
    • 75ml (2 1/2fl oz) cider vinegar or white wine vinegar
    • 50g (1 3/4oz) dark brown sugar
    • 20g unsalted butter
    • 1 tbsp Worcestershire sauce
    • 1 1/2 tbsp English mustard
    • 1 ½ tsp smoked paprika
    • 1 tsp black pepper, freshly ground


    Method:


    In a small saucepan, stir all the ingredients together until combined.

    Bubble briskly for 6-8 minutes, until reduced to a thick consistency. Cool before serving.

    Tip: The sauce will keep in the fridge for up to 1 week.

  3. Honey Garlic BBQ Sauce


    Ingredients:


    • 1 cup ketchup
    • 1/3 cup honey
    • 1/3 cup brown sugar
    • 1 tablespoon apple cider vinegar
    • 1 tablespoon molasses
    • 1 tablespoon soy sauce
    • 8 cloves garlic, minced/grated
    • 1 teaspoon onion powder
    • 1 teaspoon garlic powder
    • 1 teaspoon pepper
    • 1 teaspoon salt
    • 2 teaspoons smoked paprika
    • 1/2 teaspoon cayenne
    • 2 teaspoons worcestershire sauce



    Directions:

    Mix everything in a saucepan, bring to a boil, reduce the heat and simmer for 10 minutes.

  4. Korean BBQ Sauce


    Ingredients:

    • 1/2 cup soy sauce
    • 1/2 cup brown sugar
    • 2 tablespoons mirin* (optional)
    • 1 tablespoon honey
    • 1/4 cup pear (or apple), grated
    • 1/4 cup onion, grated
    • 1 tablespoon garlic, grated
    • 1 tablespoon ginger, grated
    • 1 green onion, sliced
    • 1 tablespoon rice vinegar
    • 1 tablespoon gochujang*
    • 1/4 teaspoon black pepper
    • 1 tablespoon cornstarch
    • 1 tablespoon toasted sesame oil



    Directions:

    Bring the soy sauce, brown sugar, honey, mirin, pear, onion, garlic, ginger, green onion, rice vinegar, gochujang, pepper, and cornstarch to simmer and cook until the sugar has dissolved into the sauce and the sauce has thickened a bit, about 5 minutes, before straining the solids out and letting it cool.

    Ingredients:


    • 1 cup yellow mustard
    • 1/3 cup honey
    • 1/3 cup brown sugar
    • 1/4 cup apple cider vinegar
    • 2 tablespoons ketchup
    • 1 teaspoon onion powder
    • 1 teaspoon garlic powder
    • 1 teaspoon pepper
    • 1 teaspoon salt
    • 1/2 teaspoon cayenne
    • 2 teaspoons worcestershire sauce (optional)

    • 2 tablespoons white vinegar (or cider vinegar)

  7. BBQ Chicken COBB Salad with Cilantro Lime Ranch Dressing


    Ingredients:


    • 4 strips bacon
    • 1 pound boneless and skinless chicken breasts or thighs
    • salt and pepper to taste
    • 1/2 cup bbq sauce
    • 6 cups lettuce, sliced
    • 1 cup tomato, diced
    • 1 cup black beans
    • 1 cup corn (~2 ears), preferably grilled or charred
    • 1 large avocado, diced
    • 4 hard boiled eggs, diced
    • 1/4 cup feta, crumbled
    • 1/4 cup green onions, sliced
    • 1/4 cup cilantro, torn
    • 1/4 cup cilantro lime ranch dressing



    Directions:


    Cook the bacon in a pan until crispy, about 10 minutes, before setting aside on paper towels to dream.


    Season the chicken with salt and pepper to taste and grill or pan fry it over medium-high heat until cooked through and lightly golden brown, about 4-6 minutes per side, before setting aside to cool, slicing and mixing in the BBQ sauce.


    Assemble the salad and enjoy!
